  • 1 orange, peeled and cut into thin wedges
  • 1 large handful of parsley
  • 1 large handful of coriander
  • 12 mint leaves
  • 2 red onions
  • 2 large aubergines
  • 6 tbs extra virgin olive oil
  • 1 large orange, juice and zest
  • 3 tsp Ras el Hanout spice mix
  • 2 tsp garlic paste
