A delicious festive puff pastry wreathed filled with leftover turkey, roasted butternut squash, gut loving black rice, cavalo nero and cranberries.

  • 1 small red onion, thinly sliced
  • 50g Cavolo Nero/ kale, stems removed and shredded
  • 200g leftover roast chicken or turkey (approx. 2 chicken legs), shredded
  • 90g cooked black rice
  • 80g leftover cooked, cubed & peeled butternut squash (or sweet potato)
  • 25g dried cranberries
  • 15g pine nuts
  • 1-2 tsp toasted coriander seed
  • 1 orange, zested
  • 2 x 320g sheet of puff pastry
  • 1 small egg, lightly whisked
  • Salt and pepper, to taste
