- 7 or 8 chicken thighs *alternatively use vegetarian sausages
- 1 carrot, roughly chopped
- 1 large onion, sliced into wedges
- 1 beetroot, cut into wedges
- A handful of Brussels sprouts, halved
- 5 garlic cloves, unpeeled
- 1 can of butter beans
- 1 large glass of white wine
- 500ml stock
- Fresh rosemary and thyme
- Butter
- Extra virgin olive oil
- Salt and pepper
- 1 orange, cut into wedges
- 4-5 tbsp marmalade
