Christmas-strone Soup
A go-to one-pot wonder minestrone soup with a Christmas twist, a delicious winter warmer topped with croutons made of stuffing.

For the stock
- Left-over turkey carcass
- 1l vegetable stock
- 1 carrot
- 1 onion
- 1 stick of celery
- Fresh rosemary and time
- Salt and pepper
For the soup
- 1 medium onion, chopped
- 1/3 of bunch of celery, chopped
- 3 medium carrots, chopped
- 3 garlic gloves, finely chopped
- Butter
- Fresh rosemary, thyme and oregano
- 8-9 fine green beans, cut into thirds
- 12 brussel sprouts, cut into fourths
- 1 can chopped tomatoes
- 1 can broad beans
- 100g any leftover vegetables
- 1l turkey stock (or vegetable stock)
- Leftover turkey, shredded (or vegetarian sausages)
- 50g pearl barley
- 100g strong cheddar cheese, finely grated
For the stuffing croutons
- Leftover stuffing
- Olive oil or truffle oil
