Christmas Veggie Salad
Impress your friends and family with this scrumptious Christmas vegetable salad drizzled with tangy mustard dressing, served with a garlic infused butterbean dip.

For the salad
- 1 small onion, thinly sliced
- 2 garlic cloves, thinly sliced
- 2 parsnips, sliced into wedges
- 2 carrots, sliced into wedges
- 3 cavolo nero leaves, stem removed and leaves chopped
- 1tbsp fresh thyme leaves or 1 tsp dried thyme
- Drizzle of maple syrup
- 1 packet of cooked puy lentils
- Handful of sage leaves
- Handful of walnuts
Dressing:
- 1 tsp wholegrain mustard
- 2 tbsp extra virgin olive oil
- Juice of 1/2 lemon
- 1/2 tbsp apple cider vinegar
- 1/2 tbsp maple syrup
Butter bean dip:
- 1 tin butterbeans, drained with 4 tbsp liquid reserved
- 3 tbsp tahini
- 3 cloves roasted garlic
- 1 tsp ground cumin
- 2 tbsp extra virgin olive oil
- Juice of 1/2 lemon
