Lesson One

Your first lesson is all about grains. Refined grains to be precise. You’ll find these specimens in white bread, white flour, cakes, pastries and biscuits.

When grains are refined, the outer bran and germ layers of the grain are stripped away. But these layers are actually where most of the fibre and many of the nutrients are concentrated. Get rid of these bits, and you lose a lot of the goodness.

Next time you’re in the supermarket, ignore the white rice, white bread and white pasta and go for the wholegrain versions instead.
